Christmas Cake Time
Yes that's right it's time to think about when to make the Christmas cake again. I've started soaking my fruit today and am planning on baking the cake around the 1st November. I usually soak the fruit for a week but as I'm off to France on Wednesday I'll be giving the fruit a couple of extra days in its sherry soak. I'm using the same Christmas cake recipe as last year with the fruit quantity given here. I'll also be making my own marzipan a few days before Christmas using this recipe. I'll post a photo of my finished cake just before the big day, I like to decorate it slightly differently each year and this is how I did it last year.
Christmas cake is my favourite cake of the year and I usually have a sneaky nibble at the boozy fruit just before it goes into the cake batter. As I've said before, it's all about quality control in this kitchen :-).
